Disney things to do outside the parks? We've done that every time. Lots to do with little ones.

*horse barn visit at the campgrounds (pony ride or trail ride -- must sign up beforehand)
*watching the water parade and the fireworks from the beach at the Poly with a Dole Whip
*garden games at the Grand Floridian (corn hole, croquet, hula hoops etc) -- we did this after a morning character breakfast at 1900 Park Faire
*Animal Kingdom Lodge - games in the lobby (drums etc) and looking at the animals in the savanna, toasting marshmallows at their fire and using night vision glasses to see animals at sunset, followed by a movie they show nightly
*monorail resorts (and using the walking path between them) and/or boat to the Wilderness Lodge (they have a raised path "boardwalk" outside which was fun for my kids to walk through the trees near the lake)
*mini golf (Fantasia Gardens near Swan/Dolphin)
*Boardwalk near the Boardwalk Resort/Beach Club/Yacht Club -- rent a four-person bicycle and ride around the Boardwalk then get ice cream at Ample Creamery or Beaches and Cream. Don't miss the playground near the Swan/Dolphin if you have little ones. Many families relaxing there when we visited.
*tenpin bowling at Disney Springs

I could easily spend a day at AKL and end the day with an outdoor movie at a resort but the kids would probably need to be forcibly dragged from the pool to leave the resort first !

If you’re in an offsite villa I’d have day 1 in the villa pool and
2 - 16 using your tickets with 1 day off in the middle for chilling by the pool.

We had a few days before our tickets started last year and we had a pool / downtown Disney day.

Each to their own - we spent 21 nights in disney visiting a park everyday and will do the same again! loved it.

I've been too many times to still have things to see, I suppose there might be things that we're not interested in that others might find fantastic. That's the issue with asking wide sweeping questions on forums (I don't mean this one OP) there are too many differing opinions.
