To add to Peko's point above, if you have the standard Amex with the 12-month valididty on the voucher, that will really reduce your options as you'll have to be booking almost immediately after triggering the voucher at the 355-day mark.
You could consider calling and upgrading your card to the Premium version. This attracts an annual fee of £200 (I think, possibly £250) but the voucher is then valid for 24 months. Once triggered you can downgrade the card again, getting a pro-rata refund of the annual fee, but retaining the 24 month validity and giving yourself a lot more options.
