I understand this reaction and its also correct in one way. You indeed still have that waiting time. But because the waiting time is happening in different stages and not in the attraction cue it does feel less like waiting and... the most important: the waiting does not happen during the time that the park is open but before. That means you dont loose any parktime. And ones you are of the attraction the rest of the park is just open. But offcourse everybody has to do whatever he thinks works out the best for him and his family. Luckily we are not all rope droppers cause that wouldnt work out either. 😉

Ps: start queuing just before closing is not really our cup of tea. We want to watch rivers of light and take it easy at the end of the day by just wandering towards the exit... (because we are rope droppers and totally worn out at park closer) 🤪

So if you arrange to go to AK/FOP further into your holiday, on your FP day you can book that first, probably more likely to get one.
The 10 days things is only for ADRs (Advance Dining Reservations).

With fastpasses, onsite guests can book the first 14 days of their stay (or the entire length of their stay if staying less that 14 days) at 60 days before their check-in date.

So the OP will be able to book all of their onsite days in one go.

As to the original question, for people staying onsite for more than 4 days then getting a fastpass for FOP is reasonably easy. For guests staying onsite for only 1 or 2 days and offsite guests, getting a fastpass for FOP can be quite difficult but not impossible.

The Fastpass+ Availability page gives you an idea of what attractions have limited fastpass availability and shows when fastpasses for these are available:

That's the same with the evening strategy though. You lose maybe 2 or 3 minutes but you are queueing whilst the park is closed so you are also not losing park time.

Appreciate that not everyone is up for staying late though - you couldn't do it with young kids, for example.

We were there 2 weeks ago and got a FP 60 days out no problem. I'd recommend getting one, we got there at rope drop and walked onto Navi River by queue for FOP was already an hour+ and I didn't see if below that. It was at least 90 minutes when we were back there in the evening for late magic hours, even when the park was shutting in an hour! And it's a brilliant ride, up there with the best at Disney. It's the only one we didn't manage to do more than once, even though my wife's first words when she got off were "I want to do that again, I could spend all day on it"
