Lobster at Narcossee

Can anyone tell me what the difference is between butter poached lobster and steamed lobster?

We tried both a few years ago and the butter poached was nicer. The waitress said that the steamed was firmer than the butter poached but we didn't notice a huge difference. We just got lobster tails though.

It is about texture. Personally I prefer steamed as the butter poached was a bit soft and slimey for me. Steamed is firmer and has more texture.

My wife had the twin tails last year, and I opted for the big baby..Both steamed as I asked our server what was the chefs favourite and recommendation..Awesome...
