A holiday in the US is not cheap, and will be more expensive if you go at a peak period like Easter. Since you didn't say what quotes you had got, or what you were trying to book, it is impossible for anyone to comment on whether they are ridiculous or not. Basically you need to shop around.
If you want a cheap flight, then you need to consider indirect, rather than direct, flights and be flexible on the day of travel - mid-week is often cheaper.
If you want cheap accommodation then consider budget hotels outside WDW or a villa - Disney and Universal hotels are expensive. You will also reduce the accommodation costs by going for fewer days.
Doing your own research online, and doing it DIY rather than just buying a package, takes time but is the way to identify bargains.

In my experience, it is not necessarily cheaper staying off Disney when you factor in the cost of food. Particularly so if you have children. We stayed off site on our last visit and most of our money was spent on food! We are a family of four. It's worth looking into staying st a moderate and getting the free quick service dining. This offer is currently on for bookings next year, but will not be available over easter. Easter on its own is an expensive time of year to visit.

We usually go just before the schools finish to get the cheaper flights. We usually stay in a villa as we like the space so we DIY everything.

If I were you I would post a bit more information.

How much was your quote? What was included for that price? What is your budget? How many people are going? What do you want to do while you are there (which parks etc)?

That will allow us to work out whether the quote is ridiculous or reasonable.

Then from that information we can work out ways in which you may be able to reduce your quote (i.e. flying indirect)

As others have commented, Easter is one of the most expensive (and 2nd busiest after Xmas) times to go

Sorry that this doesn't help but for school holiday flights, especially Easter the best prices are within a few weeks of release at the 11 month point. Direct flights will be £900+ now and indirect £650+ for single connection and decent times.
As others have said, price up the individual components, flights, accommodation, car hire and tickets.
Flights and accommodation are the ones you can control the costs of the most by choosing what fits your budget.
My personal tip would be don't feel the need to buy tickets for every park, it gets rushed and reduces the enjoyment.
