Things to do other than the parks?

We have a Dibb villa booked for a week in Orlando before heading down to Miami and the Keys.
Any ideas of things to do other than the parks?

Scenic lake ride at Winter Park, Scenic canal and lake ride at Mount Dora, Bok Tower, Harry Leu Gardens, Celebration.

Air boat ride ,state parks tubbing canoeing ,off roading , zip lining ,tree top Trek ,go carting ,old town car show ,crazy golf ,farmers markets ,cycling round Celebration
Giraffe ranch Circle B ranch just some of the things we've done not Park related
