Basic cheese sauce

Made mac and cheese tonight and this is first time in years my sauce split 🙄no idea what went wrong
How do you do yours

Pot of double cream, half a tub of philly and then a handful of grated cheese

Did you add cheese whilst still on the heat?

I make a quick roux and then add milk to make a white sauce and add cheese whilst it is on the heat and then add the cooked pasta. This is probably not a real Mac n cheese but we like it.

Did you put parmesan in? I find it does bad things.

Heaped tablespoon cornflour mixed with a little cold milk, 1/2 pint of milk brought to the boil stir in the cornflour mix, stir till sauce thickens and glossy add grated cheese. Mix in Macaroni, turn into a buttered dish and sprinkle with more grated cheese, put under grill to cheese melts and is golden brown. nom nom

Roux with butter and flour, then milk to make a white sauce then Red Leicester and cheddar, just after adding the cheese I take off the heat. This seems to give me a lovely thick and creamy cheese sauce, I do a ‘posh’ Mac and cheese and add bacon, chicken and chopped fresh tomatoes, sprinkle more cheese on the top and bake for about 15 minutes...it tastes amazing and is one of the family favourites!
