Vegetable soup recipe
I know its pretty easy to make Soup but can anyone tell me how to pep a veggie soup up... any ingredients or special spices someone can recommend.

Any chopped veg you like but soften onions, potatoes etc first. Stock pots are ideal for soups. There is a soup thread on the food section with some ideas. Also M&S, Morrison’s, Asda etc all sell ready prepped soup mixes in the vegetable aisles

My mum always added smoked bacon to her veg soup if she had any that needed using up 😳

Have you got a soup maker NG? I can highly recommend getting one if you haven't. They make the most gorgeous soup in less than 20 minutes. I love carrot, butternut and a pinch of cumin. You just chop the veg and bung it all in with water and a veg stock cube. The cumin just gives it a hint of spice and then I usually just stir in a dessert spoon of Philadelphia Light when it is done to give it a bit of creamy-ness (without the calories of cream!).

My kids (and my) current favourite is butternut and sweet potato with coconut milk; just some chopped butternut squash, sweet potato, and onion - then a tin of light coconut milk, vegetable stock and some chilli flakes, bit of garlic and ginger to pep it up (I cheat and buy it ready chopped and frozen!)
