Most eSIM packages will activate when your eSIM installed on your device connects to an allowed network at the destination.
However, there are some eSIMs that will activate at the time of installation.

you must remember it's a data plan only

Use WhatsApp Skype etc to use for calls texting etc

Although a esim most prob won’t roam on a UK network…

If I bought a French one…then maybe it would roam on a UK network ?

got the pixel 6 pro last week, absolutely love it. prior to that, i had a pixel 2. looks like esims were in the pixel 3 onward, so this is a new feature to me

I looked at this for our upcoming trip to Japan, downloaded the app but the provider they list for Japan - the costs were slightly worse than renting a mifi device once there - which we did on our last visit without any issue.

No, part of the esim set up is telling your phone which sim to use for what. If you don't need your UK phone number active though you can pull out your regular sim for peace of mind.
