How can this be, PE with Virgin has doubled in price from £2000 to Just over £4000 in less than a month. Looking on the seat map for the flights appears to be same amount of seats available (quite a few) so it isn't full. WHY?

You might need to provide a bit more information to get any proper answers. Where are you flying to /from, where are you searching and for what dates?

I have had a look around some random dates for 2022 London to MCO and premium economy return was somewhere between £1100 and £2200 on each random search.

Just because there are seats available on the seat map doesn't mean that tickets haven't been sold.

I think you have had a blip in the booking, maybe clear cookies or whatever and start again. I can see those flights available for under £2k.

The seat map isn't always accurate. Perhaps seats have been sold to VH who haven't booked a seat yet

Have you looked at Aer Lingus? They fly from Manchester now, but not everyone is aware yet. They might have better prices.
