Apologies for my confusion, but I thought I read that someone staying at a disney hotel can book all 14 days of their stay 60 days in advance all at once?

For on-site stays you can book the duration of your stay up to 14 days on check in + 60 days. For off-site its 30 days and every day. If you are just doing one day on site you will be able to book check in and check out day together and then the rest at 30 days
