Don’t worry about the outlets you can pay the same or more in Florida than here for the Uggs and Vans I would go just to have a mooch you will see something that takes your fancy and it’s a good day out. No real bargains in the Outlets now as compared to previous years, try Florida Mall .
All Disney parks have lots of rides and shows for the small ones too many to list by me but I am sure someone will tell you. If you just do Disney and shopping you will have made a good decision. Go back when you can and do Universal Seaworld and Legoland for a different holiday. Happy holiday.

I would listen to the advice about Miami, we drove there and it was a lot longer than a 4 hour drive. also there is no such thing as a cheap motel in Miami and many charge a parking fee.
If you have 14 day tickets you really want to get your money's worth out of them. Spend time viewing the animals at Animal Kingdom instead of the Zoo in Miami. A zoo is a Zoo anywhere in the world but there is only one AK
Go to a water park , there is a sandy beach type area in Typhoon lagoon buy a kids meal and you get a bucket to make sand castles, there is also much needed shade that you won't get on a beach.
You have plenty of time to plan and make adjustments, just read as much as you can and let the excitement build
