Lemonade, cream and flour scones.
Has anyone made these? They look too simple to be true?

DH made some of these recently, they were quite fluffy and light inside and firmish on the outside. Today he has just made some Scones from the Classic Cunard recipe which he prefers and say are a lot nicer.

Definitely they are a firm favourite down in New Zealand and our son gave us the recipe. They are so quick and easy to make and result in a good bake.
4 cups SR flour sifted 300ml cream Pinch of salt 300ml lemonade or soda water 1. Preheat oven to 220C and line baking tray with paper 2. Sift flour and salt into a bowl, Make a well and pour the cream and lemonade or soda water into the dry ingredients and mix together to make a soft dough. 3. Turn dough out, dust light with flour and gently roll into a rectangle. Cut into approx 12 pieces and place on baking tray. 4. Bake in preheated oven for 10 to 12 minutes Recipe courtesy of Wattie’s |

I’ve made them, they are extremely easy to do and rose well but I much prefer the old recipe and won’t try them again.
I used this recipe 300g SR flour, 150ml double cream, 160ml lemonade. Mix into a dough, roll out and bake at 190•c 20 mins. |

insides were nice and fluffy but we didnt like the outside too tough against normal scones

My first ever batch of lemonade scones are currently in the oven. Three minutes to go ... not hopeful as I am not a good baker.

I didn’t think the scones looked that nice when they came out of the oven, they seemed really dry on the outside. Also some of them were too flat I think after I cut out my first lot, I re rolled the dough too thinLy. Nevertheless they were really very nice indeed. I have never made traditional scones, I will definitely do this again as it was so easy.
The recipe I used was 400g self raising flour, 175ml double cream and 175ml lemonade. Mix to create dough, roll and cut out circles, place on baking tray without gaps. Bake at 200c for 15 minutes. |

That was going to be my question , does it need to be double cream ?
Also must it be normal lemonade or will diet do as well |
