There is good availability and you'll probably been moved onto it already, just the different flight time.
2.5 hours or so less time.

We are flying on 12th Nov with Virgin on VS073 at 13:10hrs

Family of 4 (two young kids 5 & 3yrs)

Rather than booking 4 seats in the middle we have booked 3 plus 1 on the row behind so the kids can look out of the window

Seats booked are:
46h 46J 46K
47h

Are these any good, and would you suggest any others, also is the flight looking full?

Your seats are standard EC seats so fine for what you want.
2/3 of the way back and near a galley but no real downside for me.

Note as it's such a busy flight, VS may decide to manually manage the seating so OLCI might be delayed or not doable while they get the best fit for for all.
Assuming you get to do OLCI then you'll likely be stuck with what you have assigned given how busy it is.
