My sister Olga’s roast parsnips. Christmas pud with cream - nobody else round the table likes it so I buy my own !

Sandra mine did too untill I asked my mother how she did hers
Cut parsnips in half cross wise then half long ways if thick
In a pan of water bring them to the boil and boil for 6 mins
Drain and shake the pan then coat in a mix of polenta Or semolina
And Parmesan place in hot oil and put in the oven around 50to 55 mins
I also coat roast potatoes with semolina or polenta gives a crest crunch on the out side

I have never thought to part boil.

Gryff I will give it a go if I can but get so stressed cooking Christmas lunch, have to use polenta and not parmesan because dh and dd hate it!
