Can't see why not, just keep it somewhere cool but not the fridge.

pretty sure the recommended life is 3 days depending in filling (my lot like the fresh cream style filling) them but if its kept cold they last longer we normally eat ours over 4/5 days and its never been a problem

One thing to note it they are quite big esp when boxed - I cannot fit the boxed one in my fridge so it stays out till cut then I box it up in smaller tubs and keep in the fridge.

The one thing you may want to note, depending on how you have the cake decorated, is color bleed from icing. After a day or two you might notice a little bit of color has bled from the darker color icing to the lighter. Nothing wrong with the cake, just makes the design or writing a little less crisp.

Yes, I am OCD.
