Having this for dinner tonight thought I would share photo - Salmon in a Tarragon cream sauce.

Fry them both side gently in a pan lightly sprayed with olive oil. Skin side down then pour over the mix :

2 tablespoons each of honey, whole grain mustard and soy sauce in a cup then pour over and gently cook for just a few minutes.it will caramelise beautifully. Spring onions sliced thin on top .

I do 160 degrees c, for about 20 mins...my fan oven is fierce!

I love pan fried salmon in its own oil with some onion and Cajun spice. When cooked add some petit pois and carrots maybe even some broccoli fry for a couple more minutes then add some cooked rice fry for a little longer adding some fry-light or a teaspoon of oil. My children that don't like salmon love this. I usually add extra Cajun to mine at the end.

My son is pescatarian and has salmon about 3 or 4 times a week. His favourite way for me to cook it is very plain; knob of butter beneath and on top. Wrapped in foil and cooked at 180 for 15 minutes.

We also like it with a crust of Greek yoghurt with handfuls of dill and parsley mixed in
