Mobile Healthy veg curry

How do you make urs
🤔I’m not a vegetarian but quite fancy doing a healthy veg one has I’m calorie counting

I use some pataks curry paste, whatever veg is left in the fridge (not cabbage) , peel/chop veg into large chunks/slices, mix in a bowl with curry paste, roast in a med oven for 30 min, stir in a small tub of natural yoghurt, serve with wraps or chapatis.

Lots of veg, lentils for protein. This one looks really easy if you don't fancy creating the spice mix yourself:

Have just this minute put a cauliflower and potato curry in the slow cooker and cheated with an M&S cook in sauce.

try doing a whole roasted cauliflower covered in pataks curry paste...

i normally do my own spice mix, but usually have a couple of jars of paste (not sauce) in the cupboard for quick and dirty curries

that sounds interesting - I've never roasted a whole cauliflower - does it go tender? or stay crunchy? Do you need to part-boil it first?

it goes tender, but still has a little bite to it. just like a well cooked cauliflower should!

i got the idea a while back from watching jamie oliver. heres his recipe:

I use Pataks pastes. I do a chicken curry, but add carrots, mushrooms and a potato to thicken. You could use chick peas instead of meat.
