Mobile Chicken pies

Now I make most meals from scratch but never made a pie Apart from cottage pie🙄
Really fancy doing a chicken pie as we got time now
Anyone got fab recipe
No idea what kind sauce to make 🤔

Make a white sauce to go with it, or you could make a chicken gravy stock sauce ?.

I cheat with the sauce for chicken pie.
Use a tin of good quality mushroom soup.
I also add some mushrooms fried in butter and a couple of rashers of bacon cut into tiny strips and dry fried - delicious

I make my own and it’s always with the left over chicken and the bits underneath nobody eats ( I then use the carcass for stock for soup mean Scot or frugal however you put it )
Boil leeks carrots and very very finely diced onion
Make a white sauce well seasoned with in our case garlic and pepper we all hate salty food
Combine veg veg with sauce easy at this stage to add frozen peas sweet corn etc add put in a baking dish top with mashed potatoe
Or for pot pie divide into 4 portions in individual oven proof dishes
And top with puff paste and bake
My sister makes big individual Yorkshire puddings and then adds piping hot mix to them and serves
Brother serves same mix with tarragon rice
Can you guess we were brought up in the country and nothing was wasted

Chicken, bacon and leeks. We dry fry the bacon, the the leeks and chicken in the residue/fat that comes from the bacon.
Basic white sauce - flour/butter - then add milk.
Mix it all up in a bowl. Loads of pepper. No salt - plenty enough from the bacon.
We use justrol pastry - half on the plate and half on top. Cant be having these "pies" with only pastry on top.

Bake in oven for 30ish minutes.

You can’t beat chicken pot pie from Bob Evans ! I’m off to see if they’ve put the recipe on their website (highly unlikely).
