I suspect the 16 inch version with M2 or whatever it will have in it will be ridiculous. Probably expensive too. However, given the M1 ones have such power, will there be any need? What more could you do on it? Goes again to future proofing though I suppose. Unless for the first ones they just take the bigger case and put the M1 in again.

I'm in the same category of "My Air is 8 years and no sign of letting me get a new one".

I just wouldn't put windows on the MacBook - it's a waste. If you want windows, that's fine! But it's too much money to do that.
I love the free software updates. I love how smooth everything runs between the devices. Also the wee new touches like letting you take pictures on your phone to insert to pages etc.
The whole ecosystem is just flawless. The customer service is phenomenal.

If she doesn't require the features of a pro, I'd go Air, battery life is excellent and as its name suggests, super lightweight. Student discounts and check out whatever they're going to be offering tomorrow - John Lewis will sometimes try and match a deal.

I'm sure she'll be delighted with whatever you go with.
