Stuffed Peppers

Does anyone have an easy recipe for stuffed peppers? DH can never resist a bargain and has bought 5 packets of the triple traffic light type packs of peppers as they were a bargain at 10p each! I have frozen some but thought stuffed peppers sounds good.

I just cook,a,packet of uncle bens rice add chopped tomatoes onions etc fill a very light coat on the peppers with spray one cal.oil garlic or chilli then bake for 15-20 mins at 180 but check at around 12 if pepper flesh is soft take out
I also make roasted mixed pepper and tomatoe soup easy as Thing
Cut peppers in half again a light spray of oil bake take out and put in a ploy bag for a few minutes then remove the skins add to homemade tomatoes soup base and then either blender or blitz with a stick blender I sometimes add chilli to this and serve cold in the summer or if it's really thick DIL 2 loves it as a Bloody Mary mix
