It sounds like highly processed food to me which will come back to bit us in the end.

It's assumed all processed food is bad. What is it about plant-based processed food that is actually bad?

Most foods are processed in some form.

I’m vegetarian (3.5 years) but I do find myself more swayed towards vegan/plant based foods as I prefer the taste. I’m happy making alternatives at home (my bf and our little one both eat meat), but if we’re out for food, I personally find the vegan meals so much nicer.
I always find the veggie meals are very similar, whereas the vegan ones have the meat alternatives such as seitan etc.
