Risotto is rice based so no, it can be made gluten free quite easily. You just have to check all of the ingredients to make sure they don't have gluten. Some stock cubes have wheat in them for example.

I did wonder if it was the same range in Lidl. I don't have one nearby so haven't been there in years sadly!

Knorr vegetable stock cubes and stock pots are both gluten free. They're what we use.

They do some vegetarian kebab things in Aldi which are gluten free. They're in the chilled section. I saw them the other week and planning on buying some as we're off to a festival next weekend so will be taking the BBQ! Obviously you can also make your own with vegetables (these are more of a substitute for meat, think it was moroccan spiced and there was another flavour too).

Pastry definitely out unless GF, and there isn't a GF filo pastry to my knowledge. What you planned sounds yummy though, so if you have a way of making it more as a crustless quiche or tart that would be great.

GF Crustless quiche (easy to make, I buy GF quiche from M&S/Sainsburys & they taste better warm imo)
I use Amy's brand for quick microwave veg lasagne/ mac & cheese &
GOSH for bites/falafel
GF wraps filled with salad/GOSH etc
Veggie curry( make or buy a GF sauce) with GF nan bread
GF pasta with pesto
GF crackers, cheese, olives etc
Buy just roll GF pastry & make a tart ie feta & spinach
I'm a lazy GF mostly veggie , salad with hummus , baked potato, Corn on the cob is always nice with flavoured butters.
Cross contamination is an issue so prep the GF first as even bread crumbs on butter can be enough to cause problems. Gluten is in everything even shop bought coleslaw . Whatever you serve will be much appreciated as we know it's an increased work load for the host.

Its not an allergy thing, (the Gluten) its a dietary preference, but I will do my best to accommodate it.

I think there are some fab ideas here thanks all!

If it's just a dietary thing, then that should make things a lot easier. I imagine may contains on a label won't be a problem, and you won't need to worry too much about cross contamination.

I hope you have a lovely lunch

Just to update, I made a greek feta salad, a black bean salad, lentil pasta with roasted vegetables and sweet potato fries. It all went down well!
