We are having to go back to the airport and get our hire car a couple of days after arrival as it saved us £800. Apart from lyft and uber are there any other options from a Disney resort? would love to take the magical express but don't think they'd let us do that as we're not checking out!

There'd almost certainly be a bus you could catch from the Disney Springs bus station area but, for minimal cost and maximum convenience, I'd just grab an Uber.
