New restrictions - 15 year old testing

I am completely confused about the new restrictions. We travel 5th Feb. Our 15 year old has one vaccination. We are in Scotland. What are we required to do to enter France and during our stay. We are there for 4 nights staying at Seqouia Lodge. We are also travelling with double jabbed 17 year old who will have booster this month and myself and my husband who are double vaccinated with booster.

Are the parades and fireworks on? Will dining in restaurants be open?

I’m going in January & restrictions are changing all the time. So by February they could be different again.
At the min everyone needs a pre-departure test, fully vaccinated within 48 hours & one dose or unvaccinated under 18s within 24 hours. Then to get into Disney hotel, parks & restaurants your 15 year old will need to test every 24 hours. I still don’t know if we can bring our own tests or they need to be supervised but more than likely the latter.
You also need a sworn statement printed off fir each member of your party, & to download the Toutsanticovid app as all your documents can be put on there for easy access.
Then for coming home day 2 tests back into the uk, these will need ordered before travel so you have the codes for your PLF.
At present parades are on not sure fireworks have started back & restaurants are open.
