It's a bit like airport parking in that yes you can book and park onsite at the multi-storey right next to the terminal and just walk across, or there are offsite places that offer shuttles to the terminal once you have parked up. Some of the hotels right by the port also offer parking and accommodation packages for the night before the cruise. A recent DCL fan article had this to say:
"Parking at Port Canaveral runs between approximately $65 for a 3-night cruise and $125 for a 7-night cruise. You are required to pay as you enter the lot. Rates are subject to change and updated details can be found on the Port Canaveral website.

There are also off-site parking lots available, which offer shuttles back to the port. One thing to consider with any option that requires a shuttle is the additional cost of tips, plus the additional time that will add to your embarkation/debarkation process. Since you will have your own car, you may not be on as tight of a schedule as if you were flying, so that option may work out well for you."
Hoping I am not breaking any forum rules by putting this in here, but it seemed relevant.

Another option for you is to book two cars.
One for the first part of your holiday and drop it off at the port. A shuttle bus will take you from drop off to dockside.

Then pick up the second car after the cruise. Again shuttle buses take you to the car hire depots.

That way you don’t have to worry about parking and depending on how long your cruise is you will save 3-7 days car hire. Bearing in mind the cost of rental cars, it might be worth considering.
