The only rides we had planned on doing was FOP, new Star wars and Soarin we are not bothered about doing any of the other attractions in the parks and could miss MK.

The thing is, we don't know what system will be in place by mid -January for the new Star Wars ride (Rise of the Resistance). If it is still using the boarding pass system then you'll need to get the HS first to secure a boarding pass. Mind you, even if they aren't doing boarding passes any more, you'll probably want to get to HS early in order to get into the queue as soon as the park opens to reduce your wait time.

If you can't get fastpasses for FOP (and getting 7 together for the same time on the day is probably unlikely) then the only other option is to join the standby queue. The wait could be 2 hours.

Soarin' shouldn't be too much of an issue. There might be fastpasses available for that on the day. Worst case you have to wait in the standby queue. The current average wait time for that is 35 minutes.

As long as this is all you want to do and you are prepared to queue for the rides, then you should be able to do them in a day.

You could always do FOP at park close the queue times at the end of the day can be quite minimal

I would say your best bet is to get an early boarding group for HS first by getting to the park ahead of the masses, once you have ridden RotR, use the gondala over to Epcot to ride Soarin and then bus to AK and be prepared to wait in line for FOP

If you are not going to do 4 parks in a day, then you all need to be at Star Wars well before opening to ensure you get a ride time allocation then I would suggest Animal Kingdom just before closing for FOP.
With a party of 7 you will be lucky to get a Fast pass at 30 days that will accommodate everyone.

If you really wanted to make a day of it - with 4 parks - I actually think you could max out the fast passes, choose your favourite rides in one park and start there, then you can get a FP in each park after that ( if available) but queue times for all other rides will be shorter.
Will allow for more done in a day than waiting for FoP and Star Wars.

Might be a better option for the whole party perhaps?

Get a boarding group for RotR use standby for FOP - if you can keep refreshing the app and you might find fast passes pop up but I would just use standby in your position. With a whole day focused on 3 rides you will be fine.

It would be possible to do 4 parks in 1 day and get popular rides done it’s how you plan and which parks you start with! We did 5 parks in one day and managed to ride 18 rides with some of them being popular rides such as slinky dog TSM, star tours, rock and roller coaster, navi river, Everest, test track and more! You have to have a good plan and keep checking the app for fastpasses and like everyone said lower the number you’d like then try and modify. I personally in your case would start at Hollywood and finish at AK with the best chance of trying to ride your most important!

As others have said based on current info you would need to go to HS first for your boarding group. They aren't opening early but you need to be there before they open. Once your boarding pass is called you have 2 hours to ride - this can be anytime during the day.
If you aren't bothered about the MK fireworks and have done ROTR finish at AK for FOP via standby at the end of the day, this is often quicker than the posted time.

Shove in Soarin where it fits best.
