A "how long is a piece of string" question
I have an iPad 2 which Apple stopped supporting in September of last year, I understand. I know that eventually my iPad will just stop working but has anyone any idea of how much longer I can expect to be able to use it for? So far, I am now having any issues, (sssshhhhhhh).

You can use it as long as the battery lasts. Newer apps wont run on it now but the apps you have will continue to work as long as the iPad does.

We have my MIL's old one as a back up/maths homework one and DS still manages to watch Netflix on it! Battery life isn't too bad either!

Sometimes old apps do stop working and ask you to update them to the latest version. I think I've had that happen to me once or twice. If this occurs then the OP might struggle to update them.
Technically, Apple discontinued the iPad 2 back in 2014, although as mentioned the operating system continued being updated until Sept 2016 (iOS 9.3-ish).
