I tend to use the gopro Quik app and import the videos from there onto my iphone. I then use the imovie app to create the videos. Took me a fair bit of playing around in the early days but plenty of youtube tutorials. imovie is not everyones cup of tea as a video editing software but it works for me.

I use the Quik app too. I usually make two videos of our holiday, one of pictures and one of smaller videos. It usually takes a good few hours and I like tinkering around with the videos on the return flight. The app will also auto-create videos from selected photos and videos, but I wasn’t impressed and prefer to cut and rearrange myself.

The software mentioned above does a decent job. Also a PC or Mac will probably have some free software already on it. They can be easier to use and more intuitive.

I do my video editing on laptop using Microsoft Ciipchamp.

Timelapses go via GoPro Studio to be converted to a movie, then imported to Clipchamp for top-and=tailing.
