Prepping Turkey the night before

Just a quick bit of advice needed! I do most of my Christmas lunch prep on Christmas Eve. Normally I leave prepping the Turkey until Christmas morning but I was thinking, to save myself a bit of time on Christmas Day I could prep the Turkey the night before so it’s ready in the fridge. I usually lift the skin and rub sage butter (not melted) into the breast and then rub more butter on to the skin. It’s not necessarily a timely job but just thinking of ways to minimise my time in the kitchen to be with my daughter. Would it affect the Turkey if the butter sits on it overnight in the fridge?

We’re eating a bit earlier than we used to now we have a toddler but she’s also been sleeping in until 8 recently (watch her wake up at 6:30 every day now I’ve typed that lol) so I think we might have to wake her to open her presents on Christmas day to allow time to get the Turkey in the oven early enough!

I stuff under the skin of the turkey with herb butter the day before. It helps the flavors infuse into the meat and it’s always delicious.

It's fine to do it the day before, but I wouldn't put it in the fridge. So long as the room isn't too warm it's best left out the night before cooking so it's room temperature on Christmas morning.

I do all my prep while listening to Carols from he kings on Christmas Eve and I prep the turkey same way as you in Delia Smith style
I do refrigerate mine but bring it and the beef out as soon as I get up to bring them to room temperature
