Buffet ideas

Hi All,

Any good ideas for my Boxing day buffet, any unusual ideas?
I'm very limited on time as my mum is in hospital and between working full time, the hospital and seeing my dad time is short so although I would love to make some things I just won't be able to this year.

Any ideas appreciated

I have a family get together on New Years Eve... gammon slow cooked in cola, finished off with a honey glaze and jacket potatoes with salads and dips... always seems to go down well...

Thanks it's really buffet ideas I'm looking for so people can help themselves.
It's for 6 adults and a toddler.

We have a mixture of ready made and cooked things, I always do a cola ham, we have cold turkey, pickles, a cheese selection, bread rolls, m and s chicken wings cooked in the oven. Ready made potato salad, green salad and I get a couple of Chinese and Indian platters, tempura prawns, mozerella dippers. They are all easy to cook in the oven and this is for 10 people x

My buffet for 23rd Dec consists of the following...

Sweet and sour chicken
Chicken Korma
Rice... all in one of those 3 compartment heater things that keeps your food hot (if u get me!)

Meat platter and buttered buns
Potato wedges
Indian snacks
Oriental snacks
Chicken bites
Quiche
Crisps
Coleslaw
Pickled onions
Mini Pork pies
Sausage rolls
Mini beef and ale/ham and chicken pies
Mini pizzas
Salad
Cheese/cucumber/carrot and humous

Then fruit cake
Winter berry cheesecake
Choc gateux
Black Forrest hate us with cream

We do have quite a few coming but it's all easy stuff!

I normally do a buffet for 12/13 on Christmas Eve but have decided to cheat this year and order in a Chinese. No prep, no dishes and everyone loves it too
