Table service restaurants / off menu items for autistic child

I just typed a super long post and decided no one needed to read my worrisome waffle SO! To cut a long story short...
Taking an autistic 13 year old. He’s not super limited with food but definitely has issues with textures and prefers things plain and beige for the most part.
We’re most likely getting a free premium dining plan (if I can convince myself to upgrade to the Disneyland hotel!) so a lot of the restaurants we’d like to dine at are... not very plain and beige friendly! But he really would like the experience of the restaurants (captain jacks, remy’s, the princess place I can never spell etc!) so my (not so short) question is... has anyone had any experience with custom orders? Would the chefs be willing to, if given notice, provide a plainer meal or maybe fries or mash and veg (he eats veg! Woo!) Or would this just be insulting to the chefs?
There’s a reason we don’t usually dine at fancy restaurants 😆
Anyone had any experience with having to change things? I’m also mostly on a plant based diet but heaven forbid I ask for anything vegan in France 😆

The short answer is yes. I have often heard people give specific requests for their meals - even at quick service counters, where you think why not just pick it out, the servers were never phased and always happy.
