Staying central around Southbank would be my tip - near tube stations and river for walks and clipper. It will be warm/hot (hopefully) in July and you may want the option of walking to some places so staying very central is key (use can get overpowering hot in July too)
Londoners dont use Oyster now - just normal contactless card works as well and you can get better deals but just use the same card for the whole trip as it keeps a note of your journeys and gives you the best deal - there is a way of including your trip from Gatwick too but its complicated (although cheaper than ticket or oyster) I will explain another time if you are interested Edited at 08:56 AM.
