I bought a cast iron saute pan in Sainsbury's sale last year (fraction of the price of the Le Creuset ones!) and it is the best pan ever for cooking with wine - it reduces so quickly and gives food a really great flavour.

Slow cookers are great for cooking cheaper cuts of meat but I would always reduce any wine or beer before adding it to the slow cooker. Or I'd use Knorr stock pots instead and just drink the alcohol

Just a tip when making slow cooking sauces and stews. Put a whole onion with skin ON and tsp of honey!
My mum taught me this tip. When she used to make homemade pasta sauce etc...she said the skin absorbs the bitterness and so far..always worked for me

Thanks for the whole onion tip, I will try this. I made a beef stew without alcohol and it was bitter, I thought it was because I added Worcester sauce?
