21st birthday ideas non park related

me and my boyfriend will be back in orlando in late january-early feb 2020, and it will be his 21st birthday. I'm trying to think of something special we could do? im not sure he'd be interested in a hot air balloon ride

I was considering one of the park tours but am not sure if any would be super special, maybe a dessert party? I'd prefer however if it was something non-park related

hoping for an all day activity/experience , something special, can anyone recommend anything?

see if theres a gig on somewhere (try the beacham/social, amway center or house of blues)
go shoot some guns at oak ridge gun range
go for a night out at citywalk (or downtown orlando)
watch an orlando magic game - nba/magic/schedule

Nice meal at boardwalk followed by a few cocktails at jelly rolls for the duelling pianos.
