Hi apart from big wave pools everything else should be ok as all the rides and lazy rivers are only waist deep

You will be fine at the water parks, our first Florida holiday in 2015 we went to Typhoons lagoon, my husband couldn't swim (37 at the time) and enjoyed paddling in the shallow part of the wave pool and loved the lazy river... he did come in the pool at our hotel a few days over the holiday in the shallow end and the last day of our holiday started swimming! I think it was a combination of spending more time in a swimming pool as well as there not being many other people there and he just got his confidence to try... when we came back he went to the local pool every couple of weeks at quiet times and started to really enjoy it. We were lucky enough to return to Florida last year and went to both the Disney water parks and really enjoyed them.
I am not a strong swimmer and hate being out of my depth or being splashed and can honestly say neither happened while we were there. Admittedly I have never done the slides because I'm scared of heights 😟
