I do like Star Tours at DLP (not sure if it’s the same at WDW) but always avoid Tower of Terror and Rock n Roller. We were once offered free FPs to either of them by a CM who had been chatting to my children, and we had to turn the offer down!

I’ve seen a video of Expedition Everest and I’ll definitely stay behind and wave the others off on that one.

Also love Star Tours as it doesn't really go anywhere you are just in your seat and moved around a bit. Mission Space Green is fine but the warnings for it make it sound worse than it is. As for Test Track no worse than driving down a motorway with my husband at the wheel

Can I suggest you You Tube some of the rides and see what you might like.
I’ll admit I’m not quite convinced by all of these, but I’ll have a look at ride videos and see. Soarin’ looks good, and I think I could cope with closing my eyes on Splash Mountain (definitely as a once only ride though!) I do a lot of closing my eyes on rides!

I would also describe BTM as my limit for rides. Seven Dwarfs MT is well within the limit, definitely recommend that one. Dinosaur made me feel 🤢 so never doing that again. Love FoP and Slinky Dog was OK but not one I choose to ride more than once. Splash Mountain is my favourite I only close my eye because of the fear of the water flying at me 😂
You’ll find tons of things to do that you like, enjoy!
