I hate to say it but even if you have WiFi you will not be able to stream

Don’t worry, you can’t really figure it out in advance. Until BA has the whole fleet of a particular aircraft type operating from a particular airport fitted out, there will always be an element of uncertainty, because actual aircraft is only assigned a few days before the flight.

BA has 2 levels of WiFi product available onboard, the higher level is fit for streaming, though VPN may be required to stream live TV.

Someone I know is just back from the LGW-MCO route, and they had a refurbed plane on the way out, and an old one on the way back

That's normal at the moment as the refurbs are spread out over various routes so only do LGW-MCO/MCO-LGW on certain days, once the refurb programme is done (approx end of 2019) they'll fly every day unless there's swap out for repair.
