What’s the capacity does Disney would normally run at on any give day (before Covid) apart from say 4th July, Thanksgiving or Christmas Day?

Yeah, on average MK gets around 57,000 guests a day. If we assume the maximum (100%) capacity for MK is 100,000 guests then that would be 57% of maximum capacity - as you say.

I had read somewhere recently that Disney had increased its capacity to 45%, although I’m not sure how true that was.

I don’t understand why they haven’t brought back fast pass yet. Surely that would mean more people on rides and less people milling around the park. Also means more time to spend money in shops rather than waiting in a long queue for the rides

It's actually counter productive, as Fast Passes slow down the regular queue line, so while it would swallow up more people in the park, the regular queues wouldn't move as quickly - Ride throughput (i.e. the number of people on rides) wouldn't change. Also, keep in mind that queues look mind bogglingly long due to social distancing in the queue lines. Adding an additional fast queue into the mix would mean that space would very quickly be taken up and queues would look even worse than now.

As mentioned, adding fastpass would increase the amount of time spent in the regular queue. And it does nothing to increase ride capacity - so there will be just as many people on the rides, it's just that some of them will wait for a shorter amount of time whilst many others wait slightly longer (the average wait time for everyone going on the ride will be the same).

The reason they removed fastpass is probably more due to the problem of having 2 queues running together and alongside each other. It makes social distancing between those two queues - especially at the convergence point - a little tricky. Once the social distancing rules are relaxed or removed, then they'll bring back fastpasses.
