Off the beaten track suggestions?

Hi Guys

So after one whole night of pondering we have booked for this August!

Excited doesn't begin to cover it

We cant wait to get planning and were just wondering if we could get some suggestions on what we can do in Florida that is off the beaten track so to speak? Interested in any recommendations really outside of the usual theme parks?

We love the outdoors so lakes, sports, etc.. would be great but also interested in anything inside that people can recommend!

We are planning to do Disney and Universal again but plan on leaving out Busch, Aquatica and SeaWorld this time.

Lake Louisa State Park, dolphin watch cruise, Dali Museum, Monster Truck Safari in Clermont, Helicopter ride, Orlando Science Center.
