Mobile This recipe ok for slow cooker?

So I wanted to try this recipe, looks yummy and healthy. Do you think I could do it in slow cooker? If so should I leave the black beans out and pop them in later, or will it be ok all cooking for the same length of time?

Considering swapping black beans for lentils 🤔

Yes it would be great in a slow cooker.
Blackbeans would be fine at the start or just warm through later on.
Just remember though that the volume won’t reduce so you may need to thicken the sauce at the end (cornflour etc)
Not sure how much the sweepotato would absorb

Thank you so much. I am so looking forward to this. I guess if I used dried lentils it may soak up some of the liquid. I have plenty of cornflour though.

You can leave the lid off for the last 30 mins or use a tea towel under the lid to absorb moisture for the last few hours
