The additional waterpark/mini-golf visits can be on different days to when you visit the main parks.
Also note that: - the days do all have to be within 14 days of one another (i.e. the ticket expires 14 days after first use). - each time you enter a waterpark or mini-golf course it uses one visit from the ticket - so if you go to a waterpark in the morning and to a mini-golf course in the afternoon of the same day then this uses up 2 visits.

But can I go to say MK in the morning and AK at night and would I then be able to do MK at night another day? I’m really unsure on how this hopper works 😂 we are thinking of a 3 or 4 day hopper plus

Because it is a hopper ticket you can visit as many theme parks as you want on the same day. You can do this for each day that the ticket is valid, so yes you can visit Magic Kingdom in the morning and Animal Kingdom in the night. If you wanted to you can visit Magic Kingdom, Animal Kingdom, Epcot, and Hollywood Studios for as many times as you want on the same day, for as many days that the ticket is valid.
Just to add that if you're buying the 3 or 4 day ticket you might be better off buying it from undercovertourist.com or orlandoattractions.com, I think these are cheaper than buying from the US Disney site. Link below for orlandoattractions.com. orlandoattractions/t...kets-worldwide

As mentioned above, with a hopper you can visit as many of the main parks on the same day as you want. Each day you use the ticket to enter the main parks will cost one day from your ticket, no matter how many main parks you visit on that day. So you can visit MK in the morning and AK in the evening of the same day and that will used up 1 day from your ticket. If you visit MK at night on another day then that will use up another day from your ticket.
Visiting the waterparks and mini-golf is different. With the Park Hopper Plus ticket you get a certain number of “days” to visit the main parks plus an additional number of “visits” to visit the waterparks/mini-golf. So, with a 4 day Park Hopper Plus ticket you’ll get 4 days at the main parks plus an additional 4 visits at the waterparks/mini-golf.
