Manchester derby that day with the game kicking off at 5.30...I'd avoid the city centre as much as possible that night

That will explain how busy the hotels are then, I booked the theatre tickets months ago, I’d better drive, hopefully there will still be car parking places at the Lowry outlet

The Premier Inn Media City is £109 on the 7th - it's 0.3miles from Lowry.

You'll have a great day around there. If you have time pop across to the Imperial War Museum, it's free entry and fascinating.
Plenty of places to eat around the Lowry and media city too

Have you tried the Premier inn at old Trafford or Hotel Football, we stayed there last week and it was excellent. Both are a 10 mins walk across the river to the Lowry, there's lots of eating places there too. If you decide to drive there's plenty of parking, we paid £6 from 5.30 onwards a few weeks ago.

It's all about timing 😂

If you are now staying at Salford quays then the derby shouldn't have anyt impact as its at City. The Christmas fayre will be nice, usually have some nice stuff on there and if you get chance just at Media City is a Booths supermarket which usually has some nicer stuff ( and the best Christmas magazine in the country)

As for they Coke truck the less said about that the better
