Luck than management 🤣🤣🤣

I used two egg whites and whisked them a little until they were frothy then started added icing sugar a bit at a time and whisking it in until I got the desired peaks, then I added in the juice of half a lemon and whisked some more.

They all look lovely my DDs ice mine on Christmas Eve have done it since they were little. Marzipan is on and drying out will try and remember to post a picture

Marzipan applied on Friday so I’m planning on decorating mine tomorrow.
It was DD birthday in November and for her birthday I sent her a DIY Christmas cake kit. All of the ingredients measured out, Our local Unsealed shop ( similar to the old weigh and save shops), sold a cake mix pack with all ingredients weighed out, just needed to add butter and eggs. I typed the recipe out, cake tin, baking parchment cut out to line the tin etc.
I wrapped it all separately and disguised the ingredients
I’d also bought myself a cake mix as well.
She lives in the north east and was made redundant then got a waitressing job so has been furloughed as well. Her and her partner have been renovating their house and for 18 months they have been living there without a proper kitchen, but they were in the process of fitting a kitchen so thought it would be nice to make a cake in her new oven.
I’d sent the package by courier and guess what the company lost it
The courier company (despite losing the parcel) customer service was amazing, I was refunded immediately , so I had a mad afternoon of rushing around and replacing everything and the company fast tracked the parcel. It was collected from me at 4pm in Essex and was in Lancashire by 7am the next morning.
She loved making it and on Friday she and I FaceTimed each other whilst applying the marzipan which was great fun.
One other piece of good news the original Christmas cake parcel has now turned up so she has also made that one and her partners Mum will be taking it into the care home where she works
We are FaceTime decorating the cakes on Monday afternoon
