OP you could book anytime really, although you have missed the additional booking offers such as $300 Disney gift card.

If you want to stay on Disney property and eat there daily book now for free dining. If you want to stay on Disney property but will be out and about and not eating there daily wait for a room discount. For two people room discounts can work out better than free dining depending how you eat but less so TBH with the current horrendous exchange rate.

I’ve booked the Disney part of our stay, offsite hotel and tickets so far just flights to book when they come out. with the exchange being so rubbish I didn’t want to risk prices rising. unless you want to look for a last min deal next year it’s probably best to book sooner rather than later incase rooms sell out etc.

I booked for end of Sept/Oct 2020 in November last year then amended the booking to a different hotel + include QSDP in May.
I think the general opinions have already been stated. Unless you can wait it out in the hope of getting a cheap deal at xmas or closer to departure time (which may not necessarily be what you would have wanted hotel-wise). I would book it now and take advantage of free dining

Price up the hotel and flights separately before you book. Might be the same trip cheaper. If you want a package Virgin may price match if you ask them if you can get a better deal as separate bookings. Also remember to add in the cost of parking at the theme parks mot your overall costs if you’re hiring a car. Happy trip planning 🙂
