I would certainly go with the drive into key West. The disused 7 mile bridge alongside the new one is a great walk. There were loads of Iguanas at the entrance and we saw a turtle swim underneath as we walked.

KW would be a great place to finish your vacation with as I said, a flight out, seeing it from the air and transitioning to Atlanta for your long haul home.

If as you describe your interests, it might be worth driving down the gul f coast, taking in Naples, before crossing the Everglades on the Tamiami Causeway and taking in an airboat ride with Buffalo Tiger. You could then do a night in Miami before then heading South into the Keys. Buffalo Tiger Airboats has nothing in common with the rather tamer, eco friendly airboats up around Orlando and may appeal to you more (see images).

They don’t do this in Orlando!

Or this. (Cheesits)

This was taken around 2 feet from the Gunnels of the airboat. He is around 8 foot and likes cheesits.

The original home of Buffalo Tiger up until 1964, when he moved onto the Causeway after a pollution spill. The airboat company still maintain it and take you there as part of an airboat ride.

Key West is a good 8 hour drive from Orlando not forgetting that you need to build in either a couple of stops or an overnighter.
