It's not obvious what's included. The two Winter/Summer courses are called: "Winter Summerland - Summer course" and "Winter Summerland - Winter course" according to Disney's own website. The 2013 14 day Ultimate tickets give you access to the "Summerland Miniature Golf Course".

I suspect it means you can choose either. That is, "Summerland Miniature Golf Course" = "Winter Summerland Golf Course".

Similarly, "Disney's Fantasia Gardens Miniature Golf Course" comprises 2 courses: "Fantasia Gardens" and "Fantasia Fairways". The Ultimate ticket gives you access to Fantasia Gardens and it's not obvious whether they mean just to one half of the whole course that's called "Fantasia Gardens" or to the whole area called "Disney's Fantasia Gardens Miniature Golf Course".

Like this news a lot as my boys love minature golf. We're staying at the Beach Club so just a short walk to the Fantasia Gardens Courses.
