Have fun with your packing cubes. This sounds like it will be an amazing trip. You've got some of my favourites in your list...love Longhorns and Cowfish...We stayed at Rosen Inn International a few years ago, it was a great base for Universal.
I'm loving your holiday within the holiday idea, with a staycaytion at the Poly for the Easter weekend. Hope you have a great trip. I can't wait to read all about it.

 Sooo many tasty places to eat, it is so hard to make a shortlist. I cannot wait for our Poly staycation, I think it is what I am most looking forward too  Laura Xx
