We've done April (twice - Easter, due to school holidays ), May (for a single week in half term), and late August.
If stuck to school holidays, I'd guess that late August (after the Americans have gone back to school) is possibly the less busy time, but it is brutally hot and you should expect rain every afternoon (if prepared for it, it can be quite fun).

We're planning on early May next time (when finally liberated from school holidays), because it looks the best compromise between weather (less rainy and while hot, not as brutal as later in the year) and lower crowds.

We're already counting down
