If your package includes additional parks then no you don't have to prebook your days. You can go any day for as long as your ticket is valid.

Discovery Cove offers various packages that include visits to SeaWorld & Aquatica, and/or Busch Gardens Tampa. Guests that have already purchased a Discovery Cove reservation that includes additional parks, do NOT have to make additional reservations for those parks. The guest can simply use their Discovery Cove reservation confirmation/admission voucher from the time of booking, or the barcode on their Discovery Cove lanyard and proceed directly to the turnstiles.

We have just had our 21 day ultimate tickets through for Disney. We have been on and booked a park for every day of our trip for October/November as didn't want to leave it too close to the trip as some days are unavailable eg 1st Oct and 31st oct for MK.
Looking at may and june lots of days have no parks available or limited parks. we didnt want to go all that way and pay all that money and not get in.
